I got admission to Manipal University in Manipal, is it possible for me to defer my admission to next year?

Usually deferrals are not allowed for Bachelors degree programs. In Manipal, deferrals are something I have never seen happening. However, since this year is an exceptional one, you may check with the institute’s academic section for the same. You may send them a mail with a proper reason. If you are seeking a deferral just to secure your place and take a drop, I am afraid it might not be possible because engineering seats tend to fill out very fast. It is either take it or leave it kind of a situation. You may still confirm with the university before you make a decision.
